La Prova Fiano 2025
2025 Fiano, Adelaide Hills
Texture, spice, depth.
Fiano epitomises all the things we love about Italian grape varieties: super delicious, aromatic but with a lovely subtlety, textural with a little bit of grip to the finish, and versatile in the vineyard across the extremes of different grape growing seasons. Pronounceable too!
Climate | Diverse but largely cooler due to elevation.
Season | The 2025 growing season was very dry, and warm to hot. It started early, finished early and the grapes had lots of sunshine and warmth to develop delicious flavours.
Source | This ancient Campanian variety loves the warm sunny days and cool nights of Kersbrook in the northern Adelaide Hills, with the addition of two small batches for the first time from the southern Hills - Blows Springhill Vineyard in Macclesfield and the Hardy Kuitpo Vineyard,
Winemaking | 30% was barrel fermented in old French oak puncheons for a delicious textural component, including a mixture of wild ferment on full solids and some with partially settled juice. 17% was whole bunch pressed for wild ferment on full solids in a ceramic Coralie vessel and the balance in stainless for the fruit and drive. Vegan friendly.
Style | Trademark chalky minerality, coupled with a lemon pith/bitter almond grip on the finish, making a tantalisingly textured palate and savoury finish. Fiano always speaks strongly of its vintage which in 2025 highlights the dry, warm season creating a little extra weight and texture adding to the warm season florals, spice, hazelnut and melon.
Release | August 2025
