From Ashton in the Adelaide Hills. Hand picked fruit, whole bunch pressed directly to tank for indigenous fermentation. Tiny sulphur add as juice then left alone until the sugars get low, then we crank the cooling for 5-6 weeks to slow the ferment to a crawl, partially settle the wine and drop some tartrates. Let it warm up when happy with how it looks and then into bottle to finish the primary fermentation. Rest, label, release.
