La Prova Barbera Pet-Nat 2021
Berry Vineyard, Kuitpo, Adelaide Hills. It is a great site for the Northern Italian varieties where the warm days are tempered by the cold nights. Barbera gives up delicious red fruits and super crunchy acid in this Rose style Pet-Nat.
The fruit was handpicked, chilled and then whole bunch pressed. Wild fermentation on full solids adds a delicious textural component to balance the natural bright acidity. Bottled towards the end of fermentation to finish to dryness, capturing the spritz of fermentation in the bottle, as historically made in the Petillant-Naturel style. Minimal sulphites, Vegan friendly. Bottled in June 2021.
