La Prova ‘Metodo Classico’ Fiano 2009
A dry, beautifully fresh and complex sparkling wine with subtle Fiano aromatics and hints of citrus pith and brioche.
Grown by Caj and Genny Amadio at Kersbrook, Adelaide Hills. Southern Italian varieties such as Fiano love the northern Adelaide Hills sunshine and heat, and benefit from a little elevation for cooler nights.
Hand-picked and whole bunch pressed directly to tank for wild fermentation. Tiraged with cultured yeast in September 2009 and forgotten about, in bottle, until disgorging, on 10 Feb 2021. 4 grams per litre dosage.
This is the first ever Fiano we made, in 2009 from six rows making up the first planting of Fiano in the Adelaide Hills. Not being organised enough to get it ‘to market’ and being an early pick with Fiano’s hectic acid, we made it into a sparkling, using the ‘metodo classico’ or traditional method.
